When you understand the biology, the arguments that never resolved start to make sense. The rules that seem arbitrary have reasons, and you know what they are. And you finally see that traditions that look like they contradict each other turn out to be solving the same problem – just in different ways.
By the end of the course, you’ll have something most canners don’t: a way of looking at any recipe or method and being able to see exactly where the safety lives – and where it doesn’t.
And when you can do that, the whole canning debate is just noise.
