Many people in the thread called it out as a bad idea. But some people were happy to learn the tip. That worries me.
Nowadays, it’s common for home canners to ask ChatGPT and other generative AI tools things like “How do I can green beans?” or “I want to can carrots without a pressure canner.” The appeal is obvious. These tools are fast, they answer at any hour without losing patience, and they return polished, easy-to-understand explanations. Right there! You don’t even have to scroll through a dozen web pages and fight your way past countless pop-ups to find your answer. And when you’re exhausted from harvesting said green beans or carrots, and you just want to get started with the preservation step, it’s tempting to trust this information.
The problem is, these answers sound more reliable than they are. AI tools don’t actually know what’s true. They only know how to predict what sounds true, based on patterns in the text they’ve read. And they often get it wrong.
Can AI tools like ChatGPT or Google Gemini give reliable canning advice?
In short, no. And understanding why not is key to staying safe.
When many people see an AI tool giving answers to whatever questions you ask, they imagine a kind of super Google that just knows things. It looks like a smarter search engine, one that looks up verified information, processes and understands it, and summarizes it neatly for you.
But that’s not what’s happening. A system like ChatGPT isn’t a database, a search engine, or a library. It’s a large language model – software trained to predict which words usually appear together.
Think of it as a vastly more powerful version of autocorrect or autocomplete. When you ask a question about canning safety, it doesn’t consult scientific tables or food-safety manuals. It doesn’t know what’s true. Instead, it draws on language patterns it has learned and guesses what a “right-sounding” answer might be.
Why ChatGPT and other LLMs get canning safety wrong
When it comes to food preservation, those “right-sounding” guesses can have real consequences. Since AI tools don’t understand the science that makes food safe to store, the advice they give can miss the most essential context.
Canning safety is complicated. It’s part biology, part chemistry, and part physics. And it depends on how a food behaves under heat, how moisture and acidity work together, and how the jar’s environment supports or prevents microbial growth. None of that is visible to a language model. It doesn’t know why certain combinations of time, temperature, or acidity work. It just knows how people tend to write about those topics.
That’s where things go wrong. AI tools will often blend methods that don’t belong together creating a sentence about water-bath processing from one context and pairing it with a pH value from another, creating an instruction that sounds logical and safe – but isn’t.

But when you specifically ask for something different, it often fills the gaps by making things up: attaching references to claims the author never made, quoting scientific sources that don’t exist, and fabricating “evidence” to make its answer look credible.
These are not harmless mix-ups. In canning, context is safety. When the process or proportions are wrong, you might not see the difference, but the microbial world does.
There’s also the matter of accountability. When a person or organization publishes food safety information, they stand behind it. AI tools can be powerful learning companions if you use them in the right way. It’s fine to ask ChatGPT to explain concepts like acidity, heat transfer, or microbial growth. It can help you understand why certain preservation principles exist. But it should never be the one deciding what’s safe to do. It doesn’t know the difference between a helpful explanation and a dangerous instruction. Use it to learn, not to make decisions (at least when your health depends on it).
And whatever you learn, never skip verification. Even when the answer includes citations or links, remember: citations are not proof. The reference might not say what the tool claims, or it might not exist at all. (This happens often in my experience!)

If possible, trace the information to its origin. Knowledge – whether it’s about food safety or anything else – isn’t true just because someone posted it on a web page and repeated it often enough. Facts aren’t facts because they’ve been shared; they’re facts because they can be verified. If a claim can’t be traced back to a credible source like scientific literature, textbooks, or peer-reviewed research that’s been rigorously evaluated, it isn’t something to rely on. Accuracy in food preservation (and in everything we learn) comes from evidence, not volume.

Features like research mode or reasoning mode can make it sound like the AI is reading critically or checking its own work. That’s not what’s happening. These modes don’t give the system new scientific understanding or access to a database of verified facts. They simply change how the model organizes its answers or what text it’s allowed to reference. In other words, it still predicts language, but with slightly different instructions.
Even in research or deep reasoning modes, the model isn’t analyzing the way a human would. It’s still just generating text, interpreting what it reads and rewriting it in its own words. And in that rewriting process, meaning can shift. Sentences are shortened, terms are paraphrased, nuances disappear. What comes back usually sounds plausible, but it’s not always an accurate reflection of what the original source actually said.
I use these tools in my daily work, uploading scientific papers and asking for summaries or details about a particular experiment. It saves me a lot of time, but what I get back isn’t always correct. Sometimes the summary just reverses a finding or leaves out a key limitation. Other times, it adds information that was never in the paper at all, filling in missing details it thought I might like to have. Why this happens, I don’t know. But it happens often enough to take seriously.
So if you use an AI tool to explain or summarize, treat the output as a starting point, not an answer. Read the original source for yourself. Check the context. Make sure it really says what the summary claims it does. There’s no technical shortcut to understanding.
Are Custom GPTs safe for getting canning recipes or advice?
No. You should never rely on a custom GPT or any other user-created AI assistant for canning instructions. A custom GPT is a modified version of ChatGPT that any subscriber can create, using their own uploaded data and private instructions. These tools appear in Google search results and in the GPTs section of ChatGPT, but you have no way of knowing who made them, what information they were trained on, how accurate that data is, or what guidance they’ve been programmed to give.
Because their inner workings are private, there’s no way to verify the sources or scientific basis behind their answers. Some may even reinforce unsafe ideas by design – not out of malice, but because the creator doesn’t fully understand the risks. When you interact with one, you’re trusting an anonymous person’s custom settings, not a transparent process or accountable source.
These models are not reviewed, tested, or overseen by any food science authority. Be extra cautious, and especially avoid using them for canning advice or recipes.
But what about making your own custom GPT, where you know exactly what it’s been trained on? Some people assume that if they upload a trusted source or point an AI tool to a specific web page, they’re creating a workaround to keep the model from wandering off into invented details. Surely, if it’s reading your chosen document, it can’t get things wrong.
But it can. And it does – often. As much as you might want it to work, it can still provide unsafe information.
In the end, no version or mode of an AI tool can replace real experience or verified knowledge. These systems can explain, summarize, and help you think, but they can’t tell you what’s safe to eat.
